    The Lead Line Cook is responsible for the preparation and production of food and is committed to maintaining high quality food excellence for D’Amico Hospitality. This must be accomplished with a commitment to food and guest service excellence by ensuring that all menu items are made to and presented according to specification and at the Chef’s direction. This position is responsible for running the line in the absence of the Chef and operating within cost guidelines, while maintaining safety and sanitation standards.

    DUTIES AND RESPONSIBILITIES:

    1. Maintain consistent and efficient food preparation. Direct responsibility for the preparation and presentation of all food products, including:

    · Unpacking and box popping

    · Washing fruits and vegetables

    · Sautéing food

    · Cutting fruits, vegetables, & food items

    · Assembly of sandwiches and salads

    · Plating and packing food

    · Use and care of professional knives

    · Weigh and package prep

    · Use salad spinner

    · Use automatic slicer

    · Using tongs, ladles, & spatulas

    · Pushing a rolling cart

    · Writing & other paperwork

    · Set-up & break down of work stations

    2. Knowledge of food preparation methods in accordance with Company standards and specifications.

    3. Willingness and ability to learn new ideas, new specifications, and techniques for food preparation, safety and sanitation. Willing and able to train and pass this knowledge on to all staff.

    4. Ability to adhere to daily production schedule, provide timely service to guests, and to work within cost guidelines.

    5. Maintain proper storage and rotation of food product and kitchen equipment, routinely coaching staff in procedures.

    6. Maintain standards of personal cleanliness and sanitation of all equipment and all work areas, including dish room, all in accordance with company policy and required health codes. This includes, but is not limited to: organization of wares, wiping, sweeping and mopping, dishwashing and scrubbing pots. Assisting and directing staff in all such duties.

    7. Willingness to perform duties and take initiative in order to service guests in a manner expected of D’Amico standards.

    8. Is able to maintain good working relationships and work respectfully with all staff members, kitchen, dish, front-of-the-house, and employees in other departments.

    9. Follows all required procedures for opening and closing a shift, coaching staff as required.

    10. Oversee line cooks and ware wash positions in the absence of the chef. This includes but is not limited to: act as a role model, present yourself well, encourage teamwork, treat everyone with respect, act as a leader and professional manager for BOH staff. Train, discipline, and direct staff as necessary.

    11. Performs cleaning, inventory, and other projects as assigned by chef.

    12. Ability to manage multiple tasks simultaneously, meet deadlines, and work efficiently under pressure.

    13. Lead catered events by timing firing of food.

    14. Follow and convert recipes.

    15. Performs other duties as assigned.

    PHYSICAL REQUIREMENTS:

    Must be able to bend, lift and carry items weighing up to 50 pounds on a regular and continuing basis.

    Must be able to stand and exert fast-paced mobility for period up to Ten hours in length.

    Must be able to work in temperature extremes and a noisy kitchen environment.

    Must be able to speak clearly and listen attentively to all guests and staff.

    Must be able to read, write and speak clearly and listen attentively.

    Must have manual hand and finger dexterity for adept use kitchen tools and utensils.

    Must be able taste the majority of menu items to ensure compliance with specification.

    What You’ll Do

    The Assistant Event Planner is responsible for enhancing the effectiveness of the Catering Sales Department by providing customer service and planning support to Event Planners. This position involves collaborating closely with Event Planners, clients, vendors, and various departments within the company to streamline the sales of all D’Amico Hospitality products, services, and catering venues. The Assistant Event Planner must be a highly proactive and engaged professional with exceptional written and verbal communication abilities. As a point of contact for clients, this role represents the Company and must embody a demeanor that enhances the Company’s reputation and fosters client relations.

    Key responsibilities include:

    Handle incoming calls and emails from prospective and current clients as assigned, working under the guidance of assigned Event Planner(s).Assist with updating and maintaining all relevant paperwork, including contracts, event orders, and floor plans.Collaborate with vendors, catering staff, and internal departments to ensure all event details—such as timing, setup, and special requests—are seamlessly planned, documented, and executed.Create and source specialty signage, rental equipment, wares, and other event-day collateral as needed.Attend production meetings, sales meetings, networking events, and client meetings as requested.Serve as backup for sales staff when Event Planners are unavailable, handling tours, meetings, and paperwork updates as directed.Provide backup support for the front desk, sales administrative assistant, and general office facility functions as needed.Provide on-site support for events as required.Perform additional duties as assigned in a prompt, courteous, and professional manner.

    Physical Requirements:

    Must be able to speak clearly and listen attentively to all staff and clients by phone and in person; most of whom speak English.Must be able to read and write to facilitate the communication process.Must have manual finger dexterity and be computer literate.Must be able to remain stationary for long periods of time, up to at least eight hours in length.Must be able to bend, lift, and carry items weighing up to 50 pounds on an occasional basis.Must be able to drive to facility tours, off-premise event site visits, and attend meetings (networking events, sales meetings, etc.) at various locations.Must have the ability to consistently arrive at work for all scheduled shifts as assigned.Must demonstrate computer literacy, including proficiency in managing email communications and using software such as Excel for data management and analysis.

    What You’ll Do

    This is a full-time position working 30-40 hours a week and must be able available to work 9am-5/6pm Thursday-Monday. This position is working at Bavaria Downs in Chaska,MN. The Receiving Clerk is responsible to ensure an orderly flow of supplies, focusing primarily on food and beverage purchases by using proper inventory, shipping and receiving procedures. The position will work to keep and maintain an orderly and clean storeroom, coolers, and freezers. As well, ensure proper rotation of products.

    Key responsibilities include:

    Received items by unloading vehicles; accepting deliveries; unpacking containers (To include Food and Liquor Purchases).Verifies items received by inspecting condition of items; comparing count/measure of times to purchase order and packing list; noting discrepancies.Documents items received by recording identifying information.Maintains inventory by marking and placing items in stock; establishing inventory reorder points; reporting items to be reordered.Transfers orders received by routing or delivering items to requesting department.Replaces damaged items and shortages or obtains credit by informing shipper and transporter of damage or shortage; returning damaged items; requesting new items or credit for shortages.Prepares shipment by assembling, packing, protecting, and labeling containers. Determines the method of shipment.Documents items shipped by recording identifying information of items and transport information.Prepares inventory reports by collecting and analyzing information on stock usage.Maintains inventory operations by following policies and procedures; reporting needed changes.Performs other duties as assigned.

    Physical Requirements:

    Must be able to communicate effectively with vendors, delivery personnel, and internal staff. Must be able to read, write, and interpret purchase orders, packing slips, invoices, inventory reports, and shipping documentation. Must possess manual dexterity to unload deliveries, unpack containers, label inventory, and operate basic warehouse equipment. Must have the physical stamina to stand, walk, bend, kneel, and perform repetitive tasks for extended periods, often up to ten (10) hours per shift. Must be able to bend, lift, and carry items weighing up to 50 pounds on a regular basis. Must be able to work in varying environmental conditions, including walk-in coolers, freezers, loading docks, and storage areas.
