    The Easterly | St. Thomas is a waterfront dining oasis offering innovative craft cocktails and wood-fired cuisine representative of the rustic Caribbean. The menu is ocean-to-table focused, and utilizes locally grown produce and local flavors to compliment the dishes. The Easterly offers one of the Virgin Islands most robust beverage programs with unique handcrafted cocktails, twists on Caribbean favorites, and an extensive list of craft beers & wine. Tucked away in an oasis of palm trees and rich greenery, the restaurant exudes a Bohemian-island vibe, and offers a social, vibrant and interactive dining experience.

    THE OPPORTUNITY

    RESPONSIBILITIES

    • Provide knowledgeable, friendly, attentive, efficient, energetic and thoughtful service at all times.
    • Support service team with ongoing table and floor maintenance, including, but not limited to: water service, clearing and cleaning tables and resetting tables with proper tableware.
    • Respond appropriately to any guest requests or issues by communicating effectively with the proper server or management.
    • Assist in the cleaning and polishing of all tableware.
    • Uphold Ballast Hospitalitys standards of quality service.
    • Receive instructions from multiple sources and prioritize tasks effectively.
    • Support team members in the completion of their duties to ensure the satisfaction of all guests before, during, and after service.
    • Have the ability to recite basic menu knowledge and run food to tables if needed.
    • Stock, organize and prepare service-related items.
    • Be knowledgeable of the restaurant and its history.
    • Communicate respectfully with coworkers at all levels.
    • Adhere to grooming and dress code standards.

    RESPONSIBILITIES


    • Welcome guests into our home, get to know them and treat each and every guest like a VIP.

    • Performing opening and closing duties to standards required.

    • Completing regular deep cleaning of the restaurant.

    • Setting up and detailing the dining room and stations to standards required.

    • Maintaining water levels of guest.

    • Mark, clear and reset according to the pacing of the menu.

    • Cleaning and polishing silverware and glassware.

    • Effectively communicating service irregularities to management.

    • Maintaining the table.

    • Assisting in bathroom checks.

    • Provide knowledgeable, approachable, efficient, energetic, and thoughtful service at all times.

    • Full knowledge of food and beverage menu items including the major components of a dish/drink; this may include ingredients and their source, simple descriptions of unfamiliar ingredients, preparation, and/or execution of correct food and beverage service.

    • Maintaining cleanliness of the restaurant.

    • Adhere to grooming and dress code standards.

    QUALIFICATIONS


    • A flexible schedule including nights, weekends, and lunch shifts.

    • The ability to thrive in a fast-paced environment.

    • Able to work well with others.

    • Candidates must be punctual, reliable, self-motivated and extremely detail oriented.

    • 2+ years of serving experience.

    • Must complete server quizzes and obtain a satisfactory score.

    • Must have a strong food and beverage knowledge.

    Longboard bartenders are the representative of the restaurant to guests. Bartenders are responsible for assembling and serving all beverages while guiding guests through the Longboard experience.     RESPONSIBILITIES

As the first (and last) point of contact, Lanai hosts are friendly and warm, yet professional and confident.     RESPONSIBILITIES


    • Greet all guests entering the restaurant and thank all guests leaving the restaurant.

    • Manage reservation system.

    • Ensure reservations are prioritized and seated in a timely manner.

    • Strive to accommodate walk-in guests whenever possible.

    • Clearly and politely communicate with guests when delays and/or waits occur.

    • Maintain an organized floor by quickly and efficiently seating guests according to company standards.

    • Understand and operate the reservation/seating system.

    • Maintain professional and warm guest communications - inside the restaurant or via phone/email.

    • Recognize key people in the industry, VIP guests and contacts related to the company and follow company protocol related to their visit.

    • Communicate respectfully and clearly with the service team and management.

    • Support team members in the completion of their duties to ensure the satisfaction of all guests before, during, and after service.

    • Engage management for any guest issue or complaint.

    • Maintain cleanliness and organization at the host stand and front door area.

    • Additional service and/or operational tasks as determined by the manager.

    The Executive Sous Chef supports the mission of Ballast Hospitality by overseeing day-to-day operations. The Executive Sous Chef also helps cultivate and emulate the ethics and vibe of the brand. This position participates in the hiring and training of personnel at the restaurant and is responsible for ensuring that the stated standards and goals are met. This position works actively with the team to set new goals for improving day-to-day operations through food, experience, and culture.

    RESPONSIBILITIES

    • Assist the Executive Chef and monitors all kitchen activities when the Executive Chef is not there.
    • Collaborate with other personnel to plan and develop recipes or menus, taking into account such factors as local availability of ingredients or the likely number of guests.
    • Oversee kitchen operations and uphold set standards including food quality, portion control, and presentation expectations.
    • Ensure junior chefs adhere strictly to recipes and prep lists.
    • Ensure proper storage of fresh products and other food items.
    • Work to accurately know the product mix and estimated food amounts and ingredients for correct ordering levels.
    • Responsible for maintaining kitchen equipment, scheduling routine maintenance checks with equipment vendors and ensuring equipment is fixed when broken.
    • Responsible for invoice entry, managing inventory, and reporting.
    • Control food cost and usage by using prep lists, updating par levels, controlling spending, and reviewing product mix reports daily.
    • Keeping operational documents up to date and revised when needed.
    • Maintain consistency and quality in food taste in line with photos and recipes made available by the organizations management
    • Analyze the quality of food prepared before food reaches the guests. All food preparations are expected to be in line with restaurants recipes.
    • Monitor sanitation practices daily to ensure that employees follow standards and regulations.
    • Schedule BOH all staff meetings designed to teach food safety and food handling standards.
    • Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment, and food storage areas.
    • Ensure daily line checks are conducted to verify the quality of raw or cooked food products to ensure that standards are met.
    • Control food cost and usage by using prep lists, updating par levels, controlling spending, and reviewing product mix reports daily.
    • Prepare all required paperwork, including forms, reports, and schedules in an organized and timely manner.
    • Implement training schedules for new hires and monitor progress.
    • Actively coach, inspire and develop staff.
    • Ensure all BOH staff reviews are conducted on a timely basis.
    • Foster a positive, inclusive environment for all staff and guests.
